GARDEN LOAF | |
3 c. flour 1 1/2 c. sugar 1 c. nuts 4 1/2 tsp. baking powder 1 tsp. salt 4 eggs 1 c. shredded zucchini 1 c. shredded carrots 2/3 c. salad oil 2 tsp. grated lemon peel Heat oven to 350 degrees. Grease 2 loaf pans. In large bowl, with fork, mix flour, sugar, nuts, baking powder and salt. In medium bowl, with fork, beat eggs, slightly; stir in zucchini, carrots, oil and lemon peel. Stir into flour mixture just until flour is moistened. Bake 55 minutes. Each loaf makes 8 servings 305 calories per serving. |
