BETH'S CHEESY CHICKEN 
6 to 8 pieces chicken breast (boneless and skinless)
season salt to taste
1 medium onion, sliced
1/2 c. cooking white wine
2 c. Cheddar cheese, grated

Day 1: Wash and place the chicken in a 9 x 13 glass baking dish. Add season salt and onion slices. Cover with foil and place in fridge overnight. Day 2: Preheat oven to 350°F. Place the still covered baking dish in the oven and bake for 30 minutes. Pour the white wine evenly over the chicken; re-cover and bake for an additional 30 minutes. Add the grated cheese and place back in the oven until the cheese melts. Great when served with Ranch Style Potatoes (see recipe in Vegetable section of this book).
