LEMON SQUARES 
CRUST/TOPPING:

1 c. butter
2 c. flour
1/2 c. confectioners sugar
1 tsp. salt

FILLING:

4 eggs, beaten
6 tbsp. lemon juice
2 c. sugar
4 tbsp. flour
1 tsp. baking powder

Blend crust/topping ingredients until crumbly. Set aside 3/4 cup for topping (used later). Pat remaining mixture into bottom of an ungreased 13 x 9 inch pan. Bake at 350 degrees for 20 minutes. While the crust is baking mix the filling. Remove the crust from the oven and pour the filling over it. Bake for 10 minutes. Remove from oven and sprinkle remaining 3/4 cup topping that you saved from before on top. Continue baking for 15 to 20 minutes. Allow to cool. Cover with confectioners sugar. Cut into squares and enjoy!
