BROCCOLI AND CRAB BISQUE | |
1 c. fresh green onions 1 c. sliced mushrooms 1 c. broccoli 1 clove garlic, minced 1/4 c. butter 1/4 c. flour 1/4 tsp. dried thyme, crushed Salt and pepper 1 sm. bay leaf 3 c. chicken broth 1 c. light cream 3/4 c. shredded Swiss cheese 16 oz. can crab meat Cook onions, mushrooms, broccoli and garlic in butter until tender. Blend in flour, thyme, salt and pepper and bay leaf. Add chicken broth and cream all at once. Cook and stir until thickened and bubbly. Cook and stir 1 minute more. Add cheese. Stir until cheese is melted. Add crab meat and heat through. 6-8 servings. |
