BROCCOLI AND CRAB BISQUE 
1 c. leeks, sliced
1 c. mushrooms, sliced
1 c. broccoli, chopped
1 clove garlic, minced
1/4 c. butter
1/4 c. flour
6 oz. crab meat
1/4 tsp. thyme
1/8 tsp. pepper
1 sm. bay leaf
3 c. chicken broth
1 c. light cream
3/4 c. shredded Swiss cheese

In saucepan, cook leeks, mushrooms, broccoli and garlic in butter until tender crisp. Blend in flour and seasonings. Add chicken broth and cream all at once. Cook until thickened and bubbly plus 1 minutes. Add cheese, stir until melted. Add crab meat.
