CRAB BISQUE 
1/4 c. butter
1 c. broccoli florets
1 c. scallions, chopped
1 c. sliced mushrooms
1 c. light cream
1/4 c. flour
1/4 tsp. thyme
1/4 tsp. pepper
3 c. chicken broth
3 oz. shredded Swiss cheese
1 can crab meat

Melt butter. Add broccoli, mushrooms, and scallions, saute. Add flour, thyme, pepper, broth and cream. Stir until thick and bubbly. Add cheese and crab. Stir until heated and serve.

I made this but reduced the amount of fat to make it healthier. Instead of heavy cream, Swiss cheese, butter, chicken broth, I used olive 2 tbsp oil and 2% milk. Flour and milk thicken to create texture. It is still delicious.
Be generous with pepper, thyme and garlic--broccoli and mushrooms can absorb a lot of taste.
I served it over rigatoni and it was divine.
