HAYSTACK COOKIES 
1/8 c. water
1 c. pineapple or orange juice
3 c. dates, chopped
1 1/2 c. raisins
4 c. unsweetened coconut, shredded
3/4 c. whole wheat flour
1 2/3 c. chopped walnuts
1/3 c. rolled oats (old fashioned)
1/2 tsp. salt

Blend water, juice, dates and raisins until smooth. Add dry ingredients. Mix lightly. Scoop onto ungreased cookie sheet with small ice cream scoop. Bake at 350 degrees for 20-30 minutes, until browned.
