SKILLET CORN FRITTERS 
1 egg
1 c. pancake mix
1 c. oil
1/4 c. milk
1 (12 oz.) can corn, drained

Preheat electric skillet to 400 degrees.

1. Blend egg and milk in a bowl.

2. Add pancake mixture to egg mixture. Mix well. Add corn.

3. Drop by teaspoons into hot oil in skillet. Cook quickly until fritters are golden brown, about 4 minutes.

4. Serve hot with maple syrup. Serves 4.
