OATMEAL CAKE 
1 1/4 cup boiling water
1 cup 1 minute oats
1 tsp. vanilla
1/2 cup butter
1 cup brown sugar
1 cup sugar
2 eggs
1 1/2 cup all purpose flour
1/2 tsp. cinnamon
1 tsp. baking soda

Preheat oven to 350°F.

Mix water, oats, and vanilla and set aside. Cream butter and sugars; add eggs beating well. Add dry ingredients and oatmeal mixture. Mix well.

Bake in a 9 x 13-inch greased pan. To with coconut-pecan frosting.
