CHINESE NEW YEAR RICE 
3 tbsp. vegetable oil
1 lb. boneless chicken breasts, cut into bite-size pieces
3 1/2 cups chilled, cooked UNCLE BEN'S® converted rice
3 green onions, sliced
1 stalk celery, diagonally sliced
1 small carrot, shredded
1 to 2 tbsp. soy sauce
1/8 tsp. black pepper

Heat oil in large skillet or wok over medium heat. Add chicken. Cook and stir until lightly browned. Add remaining ingredients. Cook and stir until heated through.

Makes 6 servings.
