SPINACH BISQUE WITH CRABMEAT | |
4 slices white onion 2 (10 oz.) pkgs. frozen spinach, chopped 6 c. chicken broth 6 tbsp. butter 2 tbsp. flour Salt and white pepper to taste 2 c. half and half 1 c. fresh crabmeat 1/2 tsp. nutmeg Add onion to spinach and cook according to directions on spinach package. Drain thoroughly. Combine with 2 cups chicken broth and blend until pureed. Melt butter in large saucepan. Stir in flour, salt and white pepper until blended. Gradually stir in remaining 4 cups chicken broth and bring to boil, stirring constantly. Add pureed spinach mixture; cook over low heat 10 minutes. Stir in half and half and crabmeat. Heat, but do not boil. Add nutmeg. Taste for seasoning. Serves 8-10. Very good, easy. |
