SUE'S SUMMER FRUIT TART 
1/2 c. sugar
1 c. butter
3/4 c. firmly packed brown sugar
2 eggs
1/2 tsp. vanilla
1 1/4 c. whole wheat or unbleached flour
1 container of whipped lowfat cream cheese
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
3 c. oats, old fashioned

Beat together butter and sugar until light and fluffy. Blend in eggs and vanilla. Add flour, soda, salt and cinnamon, mix well. Stir in oats. Spread in lightly greased square pan or pizza pan. Cook 9 to 10 minutes at 350 degrees until light golden. Do not overcook. Allow to cool.

Spread cream cheese on top and arrange sliced fruit (kiwi, strawberries, apples, etc.) decoratively on top and serve. Cut in squares or pie shapes depending on size of pan.
