LEMON POTATO STICKS | |
3 lg. scrubbed potatoes 1 lemon, grated rind & juice 2 tsp. butter 1/2 tsp. paprika 3 tbsp. grated Parmesan cheese Cut potatoes into quarters lengthwise. Grate the rind, then squeeze the juice from lemon. Melt butter, combine with 2 teaspoons lemon juice and brush on cut surface of potatoes. Combine 2 teaspoons grated lemon peel, 1/2 teaspoon paprika and 3 tablespoons grated Parmesan cheese. Sprinkle over the wet surface of potatoes. Place pieces on a foil lined and lightly greased baking sheet. Place in preheated 400 degree oven for 30-35 minutes or until easily pierces with a fork. Good with chicken or fish dishes. |
