BAKED STUFFED APPLES WITH
BUTTER-RUM SAUCE
 
4 lg. Rome or other baking apples
1/4 c. sugar
1 tsp. cinnamon
1/2 c. chopped nuts
Water

Core apples almost through to bottom; remove 1" band of peel from stem end. Place apples in shallow baking dish. Mix sugar, cinnamon and nuts; spoon equal amounts in each apple cavity. Add water to baking dish to 1" depth. Bake in preheated 350 degree oven for 40 to 50 minutes until apples are tender. Serve warm or at room temperature with Butter-Rum Sauce recipe which follows. Makes 4 servings.

BUTTER-RUM SAUCE:

1/2 c. sugar
1/2 c. heavy cream (or Pet milk)
1/4 c. butter
2 tbsp. rum

In medium saucepan, bring to boil sugar, heavy cream and butter. Reduce heat; simmer, uncovered, stirring frequently, 5 minutes. Remove from heat; stir in rum. Serve warm. Makes 1 cup.
