LEMON BATTER FISH | |
1 c. flour 2/3 c. water 1/3 c. lemon juice 1 egg, beaten 1/2 tsp. sugar 1 tsp. baking powder 3/4 tsp. salt 1 lb. fish fillets, cut in sm. chunks In bowl, mix 1 cup flour, water, lemon juice, egg, baking powder, salt and sugar. Dip fish in additional lemon juice, coat with flour, then dip in batter. Fry in hot oil until golden. Can be used to coat shrimp, scallops and oysters. Don't dip seafood into extra lemon juice and flour. |
