CHICKEN SALAD WITH CREAMY
SZECHUAN DRESSING
 
3/4 c. soy sauce
1/4 c. peanut oil
2 c. mayonnaise
1 tbsp. Dijon style mustard
1/4 c. oriental style sesame oil
Szechuan chili oil, to taste
2 whole chicken breasts, cooked and cubed
6 green onions, thinly sliced
2 carrots, coarsely chopped
1 red sweet pepper, chopped
1 (8 oz.) can bamboo shoots, drained and sliced
1 (6 oz.) can corn cob
1/2 c. chopped fresh coriander (celantro)
1/2 lb. snow peas, julienned, blanced to crisp
Tender and iced fresh coriander
Lightly toasted sesame seeds

Blend soy sauce, peanut oil, mayonnaise, mustard, sesame oil, and chili oil to smooth mixture. Add remaining ingredients. Serve topped with sprigs of coriander and sesame seeds.

Serves 12 as a salad, or 6 as a main course.
