MEXICAN CASSEROLE 
3 pkgs. corn bread mix - made to directions on pkg.
2 lbs. browned ground beef
1 med. chopped onion and saute
2 cans Ro-Tel tomatoes (blend) or Mexican tomatoes
Med. Cheddar cheese, grated (2 lbs.)
Jalapeno pepper to taste

Divide corn bread mix in half and bake 1/2 in 9 x 11 inch dish until brown.

Then layer: 1) 1/2 grated cheese; 2) ground beef and onions; 3) tomatoes; 4) peppers; 5) rest of cheese; 6) corn bread mix remaining. Bake at 400-425 degrees until corn bread is golden brown.
