MICROWAVE CINNAMON - APPLE SLICES | |
2 sm. apples (about 1/2 lb.) 1 tbsp. lemon juice 2 tsp. butter 1 1/2 tsp. honey 1/2 tsp. brandy or rum extract 1/4 tsp. ground cinnamon or nutmeg Core and slice apples into 1/2-inch thick slices. Sprinkle apple slices with lemon juice; set aside. In 9-inch microwaveable pie plate combine butter, honey, and extract and microwave on HIGH for 45 seconds until butter is melted. Add apple slices, turning to coat with mixture; sprinkle with cinnamon or nutmeg. Cover with plastic wrap, folding back 1 corner to allow steam to escape and microwave on HIGH for 4 minutes, rotating plate 1/2 turn halfway through cooking. Using a pancake turner, carefully transfer apple slices to 2 individual serving plates, reserving butter mixture in pie plate. Return pie plate to oven and microwave on HIGH, uncovered, for 1 1/2 minutes, until mixture is slightly reduced. Drizzle half of the butter mixture over each portion of apple slices. Makes 2 servings. Each serving provides: 1 FA; 1 FR; 15 C VARIATION: Stove-Top Cinnamon-Apple Slices Sprinkle apple slices with lemon juice; set aside. In 10-inch nonstick skillet melt butter over medium-high heat; stir in honey and extract. Add apple slices, turning to coat with mixture; sprinkle with cinnamon or nutmeg. Cover and cook until apple slices are soft, about 2 minutes. Using a pancake turner, carefully transfer apple slices to 2 individual serving plates, reserving butter mixture in skillet. Reduce heat to low and cook butter mixture, stirring constantly, until mixture is slightly reduced, about 1 minute. Drizzle half of the butter mixture over each portion of apple slices. I use reduced calorie butter (2 teaspoons) which cuts the fat in half. I top the warm apple dessert with a tablespoon or 2 of Cool Whip, but don't forget to add the extra calories to the count. It's yummy! |
