CHICKEN AND RICE CASSEROLE 
2 c. cooked rice
1 sm. chicken, boiled and chunked
2 c. sliced celery
4 tbsp. chopped onion
2 cans cream of mushroom soup
2 tbsp. lemon juice
1 tsp. salt
1/2 tsp. pepper
1 1/2 c. mayonnaise
1 c. water
4-5 hard boiled eggs
4 c. crushed potato chips, for top

Mix the first 7 ingredients. Mix the mayonnaise with the water and ad to the first ingredients. Then add the chopped eggs. Put in a greased 9 x 13 inch pan. Cover with potato chips. Bake, uncovered, for 1 hour at 350 degrees. Serves 12.
