ANGEL WING COOKIES | |
1/2 c. flour 1/2 tsp. salt 2/3 c. sugar 1 c. soft shortening 1 tsp. vanilla 2 eggs 1 c. quick uncooked oats Citron, candied cherries and chopped nuts Sift together flour, salt, and sugar into a bowl. Add shortening, eggs, vanilla. Beat until smooth, about 2 minutes. Fold in rolled oats. Drop from a teaspoon onto a greased cookie sheet, allowing about 2 inches between cookies. Flatten with a knife dipped in cold water. Decorate. Place at 375 degrees for 10-12 minutes - CHECK AT 8! or until cookies are golden brown around the edges. Make sure oven rack is near the top of the oven, because these cookies really cook and are wafer thin. Remove from baking sheet IMMEDIATELY. Makes about 4 dozen. |
