BEEF A LA STROGANOFF 
1 1/2 lbs. sirloin
5 tbsp. flour
1 1/2 tsp. salt
1/4 tsp. pepper
1/4 c. finely chopped onion
1/2 lb. fresh mushrooms, sliced
1 clove garlic, crushed
1 (10 1/2 oz.) can beef consomme
1 tsp. paprika
1 tbsp. Worcestershire sauce
1 c. sour cream

Remove fat from steak and slice 1/4" x 2" or 3" strips. Have flour, salt and pepper in bag and shake to blend. Add strips of beef and shake to lightly coat. Melt butter in 10" skillet. Brown beef strips in not too hot heat 3 to 4 minutes. Turn often with spatula. Remove from pan. In drippings saute onions and mushrooms. Add butter if necessary. Brown lightly. Add crushed garlic. Stir in 2 tablespoons flour and blend until lightly browned. Add can of consomme. Cook 5 minutes, stirring until sauce is smooth and vegetables are barely cooked. Reduce heat and stir in sour cream, blending well. Let cook just below boiling until sauce is thick. Add beef strips and more salt and pepper, if desired. Add paprika and Worcestershire sauce. Serve with noodles, parsley rice or small new potatoes. 6 servings.
