BAKED YELLOW SQUASH 
1 med. marrow
6 oz. sm. onions
1 oz. golden raisins
5 tbsp. olive oil
1/2 c. blanched almonds
3 tbsp. butter
Salt
Black pepper

Peel marrow, remove seeds and cut into large dice. Peel onions. Soak raisins in warm water 15-20 minutes. Heat 4 tablespoons oil and cook almonds until almost golden brown. Remove before too brown as they continue to cook after taking them off the heat. Drain on towel and sprinkle lightly with them off the heat. Drain on towel and sprinkle lightly with salt. Cook onions in boiling salted water for 5-6 minutes, add the marrow and cook for 4-5 minutes. Drain well.

Heat butter and one tablespoon of oil in heavy pan. Add onions and marrow and cook over gentle heat for 15-20 minutes, until vegetables are tender and lightly colored. Drain raisins, add to pan. Stir carefully so as not to break the vegetables. Pile into baking dish, sprinkle with the nuts and bake in a preheated 400 degree oven for 10-15 minutes.
