1 sm. pkg. lime Jello
1 c. hot water
1 c. drained crushed pineapple
6 oz. cream cheese
1/2 c. diced celery
1/2 c. chopped walnuts
1 tbsp. pimento (optional)
1 tbsp. mayonnaise
1 tsp. lemon juice
1/2 tsp. grated lemon rind

Dissolve Jello in hot water. Chill slightly. Whip 3 ounce cream cheese, add to Jello with celery, nuts and pimento. Chill until set. Spread with icing.

ICING:

Whip 3 ounce cream cheese and 1 tablespoon mayonnaise and 1 teaspoon lemon juice and 1/2 teaspoon lemon rind. Spread on set Jello and chill.
