ZUCCHINI SOUP 
1 lb. hot sausage or mild sausage
1 c. chopped onion
1 c. chopped celery
2 lbs. zucchini, diced
2 peppers, chopped
2 lg. cans tomato puree
Salt and pepper
1 tsp. Italian seasoning
1 tsp. oregano
1 tsp. basil
1 tsp. garlic powder

Remove skins, cut up and brown sausage. Add onion and celery, saute 10 minutes. Add remaining ingredients. Simmer 1/2 hour.
