ZUCCHINI SOUP FROM IDYLWILDE

2-4 zucchini (depending on size)
2 tbsp. butter (or mix butter & oil)
2 tbsp. chopped scallions including green ends
1-2 cloves garlic, finely chopped
1 c. cream
Ground pepper
Salt

Cream - for thinner soup use chicken broth and (skim) milk to the consistency you like.
