KIISSELI (FINNISH FRUIT SOUP) | |
1 lg. pot boiling water (about 3 qt.) 1 box pitted prunes 1 box raisins 2 cinnamon sticks 1 bottle dark Karo syrup 2 tbsp. lemon juice 4 heaping tbsp. potato flour or cornstarch 1 c. water 16 oz. frozen or fresh strawberries or raspberries 1 lg. can fruit cocktail In a large pot, boil water, prunes, raisins and cinnamon sticks. As it boils, add Karo syrup and lemon juice. In a small bowl, mix 4 heaping tablespoons potato flour or cornstarch with 1 cup water, then add to boiling mixture. Cook until clear and thick, about 10 minutes. add fruit. Serve hot or cold; tastier the second day; keeps well in refrigerator about 1 week. Fresh berries in season can be used instead of other fruits; use as much water and berries as desired, then thicken with potato flour and water mixture. |
