ZUCCHINI CAULIFLOWER SALAD 
3 c. diced unpeeled zucchini
1/2 c. diced celery
1/4 c. diced onion
1/2 c. diced green pepper
1/2 c. diced red pepper
1 1/2 c. cauliflower, cut in sm. chunks

DRESSING:

1/3 c. vegetable oil
2/3 c. vinegar
1/2 - 2/3 c. sugar
Salt & pepper to taste
Dash Italian seasoning (optional)

Combine all salad ingredients in a large bowl; set aside. Prepare dressing by boiling all ingredients for five minutes; cool. Pour over salad and chill 4 hours or overnight to blend flavors. This salad keeps well for several days. Yield: 8 servings.
