ZUCCHINI - CAULIFLOWER SALAD 
3 c. diced, unpeeled zucchini
1/4 c. diced onion
1/2 c. diced red pepper
1/2 c. diced celery
1/2 c. diced green pepper
1 1/2 c. cauliflower pieces

DRESSING:

1/3 c. vegetable oil
1/2 to 2/3 c. sugar
Dash of Italian seasoning (opt.)
2/3 c. vinegar
Salt & pepper to taste

Combine all salad ingredients in large bowl; set aside. Prepare the dressing by boiling all ingredients for 5 minutes; cool. Pour over vegetables. Stir to coat. Chill 4 hours or overnight to blend flavors. (Keeps for several days.) Serves 8.
