GRANDMA FORSELIUS' FRUITCAKE | |
1 med. box raisins 2 c. brown sugar 3 tbsp. Crisco shortening 2 c. hot water (use cherry juice) 1 tsp. cloves 2 tsp. cinnamon 1 tsp. nutmeg 1 tsp. salt 3 c. flour 1 tsp. baking soda 1 (8-12 oz.) bag walnuts 1 med. jar cherries Mix all ingredients except flour, baking soda and walnuts in a large pan. Bring to a boil. The cherries should be cut in half. After boiling 5 minutes, turn off heat and add flour, baking soda and walnuts; mix well. Recipe makes 2 loaf cakes. Divide mixture into two loaf pans (well greased) and bake at 325 degrees for 45 minutes to an hour. This is a dense cake and should be tested for doneness. |
