SPANISH BACON CORNBREAD 
2 c. flour
1/4 c. sugar
1 tbsp. salt
2 pkgs. yeast
1 egg
1/4 c. fried crumbled bacon
1/4 c. instant minced onion
1/4 c. chopped green pepper
3/4 c. cornmeal
1 c. water
1 c. milk
1/4 c. cooking oil
1-1/4 to 1-3/4 c. flour

Combine items in large bowl. Heat in saucepan until very warm. Add egg and liquid to dry items. Blend on low 1/2 minute and 3 minutes on high. By hand add 1-1/4 to 1-3/4 cups flour to form a stiff batter. Cover; let rise in warm place about 50 minutes. Stir down batter; spoon into greased pan. Immediately place in oven. Bake in greased 9-inch round layer pan or 12-inch pizza pan at 375 degrees, 40 to 50 minutes for 9-inch, and 30 to 35 minutes for 12-inch. Makes 1 loaf.
