2 c. cooked brown rice 1 1/4 c. chopped scallions 1 c. fresh bean sprouts 1/4 c. toasted cashews (or other nut) 1 lg. red or green pepper, chopped 1 stalk celery, diced DRESSING: 3/4 c. orange juice 1/2 c. oil 3 tbsp. soy sauce 2 tbsp. lemon juice Salt, pepper, garlic powder to taste Combine all ingredients and serve chilled. VARIATIONS: 1/2 c. sliced water chestnuts Chunk pineapple Toasted unsweetened coconut Serves 6-8. |
