FARFEL PUDDING 
3 eggs
1/4 c. sugar
2 c. farfel
2 c. cottage cheese
1 c. sour cream
1/3 c. butter, melted
1/2 c. apricot preserves
1/2 c. finely chopped walnuts
2 tbsp. sugar
1 tsp. cinnamon

Beat eggs until light, gradually beat in 1/4 cup sugar until fluffy. Soak farfel in cold water, squeeze out excess water. Add farfel, cottage cheese, sour cream, butter and preserves to egg mixture and blend well. Turn into 12 x 7 1/2 x 2 inch baking dish. Mix nuts, sugar and cinnamon. Sprinkle on farfel mixture. Bake 40-45 minutes. 10-12 servings.
