FRIED FISH PARMESAN 
1/2 c. buttermilk
2 oz. parmesan, grated
1/4 c. flour
1/2 tsp. salt
Dash onion powder
Dash garlic powder
Dash white pepper
2/3 c. corn meal
1 lb. trout or redfish fillets

In a small bowl combine buttermilk and parmesan, set aside. In a separate bowl combine flour and seasonings, set aside. Sprinkle flour mixture over fish, dip fish in buttermilk mixture, then roll in corn meal. Pan fry in heated oil about 3 minutes each side until golden brown and fish is flaky.
