FISH WITH FERMENTED SOYBEANS 
1 lb. fillet of any fish
1/2 c. all-purpose flour
Cooking oil for frying
3 cloves garlic, crushed
1 tsp. chopped fresh ginger
1 onion, sliced
2 tomatoes, sliced
4 pieces soybean cheese OR
1 c. cubed tofu
1/2 c. fermented yellow or black soybeans
1 c. water
2 tbsp. soy sauce
2 tbsp. cornstarch
2 tbsp. water

Cut fish fillet into serving pieces. Roll in flour, then fry in cooking oil until half done; set aside.

In a saucepan saute garlic, ginger, onion, tomatoes and soybean cheese in 2 tablespoons of cooking oil. Add 1/4 cup fermented soybeans with 1 cup water and cook for 1 minute.

Drop in the half-fried fish. Add the rest of the fermented soybeans and the soy sauce. Thicken with cornstarch dispersed in 2 tablespoons water. Cook for 5-10 minutes.
