CRISPY OATMEAL COOKIES 
1 c. butter
1 c. brown sugar
1 c. granulated sugar
1 egg
1 c. vegetable oil
1 tsp. vanilla
1 c. oats (quick or regular)
1 c. crushed corn flakes
1 c. coconut (opt.)
1/2 c. chopped nuts
3 1/2 c. flour, sifted
1 tsp. baking soda
1 tsp. salt

Preheat oven to 325 degrees. Cream butter and sugars until fluffy. Add egg and mix well. Add vegetable oil and vanilla, mixing well. Stir in oats, corn flakes, coconut and nuts. Add flour, soda and salt. Mix well and drop by teaspoonfuls onto ungreased cookie sheet. Flatten with fork dipped in water. Bake 12 minutes. Cool on cookie sheet a few minutes before removing. Yield: 5 to 6 dozen.
