SAUSAGE AND RICE CASSEROLE 
1 lb. Jimmy Dean hot pork sausage
1/2 c. chopped green pepper
1/2 c. chopped celery
1 med. onion, chopped
1 c. uncooked rice
2 cans chicken and rice soup
1 c. water
1/2 or 1 c. grated cheese

Fry sausage, pour off fat. Add pepper, onion and celery. Saute slightly. Add remaining ingredients except cheese. Pour into casserole dish. Bake at 350 degrees for 1 1/2 hours. If it appears too dry, add small amount of water. Sprinkle cheese over top last 10 minutes.
