ZUCCHINI CASSEROLE 
5 zucchini, cubed
1 lg. onion, chopped
3 carrots, shredded
1 c. sour cream
1 can cream of chicken soup
1 c. seasoned croutons
2 tbsp. melted butter

Saute the zucchini, onions and carrots in butter for a few minutes. Add sour cream and soup. Pour the melted butter over the croutons and cover the top of the casserole. Bake 20 minutes at 350 degrees.
