BETSY'S SHRIMP SCAMPI 
1/2 c. or 1 stick butter
2 cloves garlic, minced
1/2 tsp. paprika
1/3 c. snipped parsley
Dash cayenne
4 c. cleaned, cooked shrimp
Parmesan cheese

Melt butter. Add garlic, paprika, parsley and cayenne, cook slightly. Add shrimp and stir to coat. Heat until shrimp are hot and bubbly. Add cheese, cover and let stand several minutes until cheese is melted. Serve over rice. (12 ounces raw, in shell shrimp = 1 cup approximately.
