SPANISH CHICKEN SALAD 
3 1/2 c. cooked chicken strips
1 sm. crisp head lettuce, shredded
1 lg. red onion, thinly sliced
1/2 c. olive oil
1/4 c. red wine vinegar
Salt, pepper
Lettuce leaves
2 oranges, peeled and sliced for garnish
2 avocados, peeled, and sliced, for garnish
1 bunch small radishes, trimmed and sliced for garnish

Place the chicken, lettuce, and onion in a bowl. Thoroughly combine the oil and vinegar. Season to taste with salt and pepper. Pour over the salad, toss gently then arrange the chicken on lettuce leaves. Garnish with orange, avocado, and radish slices. Makes 6 servings.
