CARROT CASSEROLE 
4 c. sliced carrots
1/4 c. butter
1 med. onion, sliced
1 c. Velveta cheese, diced
1 c. crushed potato chips

Cook carrots in small amount of water until tender, then drain. Put carrots in greased casserole and stir in butter, onion, and cheese. Top with crushed potato chips.
