APPLESAUCE WHEAT MUFFINS A LA

1 1/2 c. sifted unbleached white flour
3 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. salt
1/2 c. brown sugar, packed
3/4 c. wheat germ
2 eggs, lightly beaten
1 c. thick applesauce
1/2 c. milk
1/4 c. oil

Sift together flour, baking powder, cinnamon, nutmeg and salt into a bowl. Stir in brown sugar and wheat germ. Mix eggs, applesauce, milk and oil. Add to dry ingredients and stir just to moisten thoroughly. Spoon batter into greased or paper lined muffin cups, filling no more than 2/3 full. Bake at 400 degrees 18 minutes or until wooden pick comes out clean. Serve hot with butter.
