BAKED CREAMED SPINACH 
2 tbsp. butter
1 sm. onion, finely chopped
2 tbsp. all-purpose flour
1 tsp. salt
1/8 tsp. pepper
1 c. milk
2 eggs, separated
2 (10 oz.) bags finely chopped spinach

Cook onion in butter until tender. Stir in flour, salt and pepper. Gradually stir in milk; cook and stir until sauce boils, slightly thickened. Preheat oven to 350 degrees.

Beat egg yolks slightly. Pour into sauce; stir rapidly. Stir until thickened (do not boil). Remove from heat, stir in spinach. Beat egg whites until stiff peaks form with wire whisk. Fold gently in spinach mixture. Pour into 8x8 inch baking dish, greased. 20 to 25 minutes.
