APPLE PANCAKE 
3 tart apples (sm. to med. size)
4 tbsp. butter
2 tbsp. sugar
1/4 tsp. cinnamon
1/4 tsp. nutmeg (optional)
1 c. Bisquick
2/3 c. milk
1 egg
1 tbsp. sugar

Core and peel apples. Cut into about 12 slices. Melt butter in a 9 inch iron skillet. Stir in the cinnamon, nutmeg (if desired) 2 tablespoons sugar, and apple slices. Saute until tender - do not burn - stirring occasionally. Combine Bisquick, milk, egg, and rest of sugar until just moistened. Pour over apple slices in skillet. Turn heat to low and cook 10 minutes until surface of pancake looks dull. Place in oven under broiler for a couple of minutes to brown; watch carefully. To serve, turn upside down on plate and dot with butter. Serve with warm syrup.
