APPLE PIE SURPRISE 
FILLING:

3 c. tart apples, peeled, cored, and sliced
1/2 c. dark raisins
2 tbsp. grated lemon peel
1 tsp. cinnamon
1 tsp. nutmeg
2 lg. eggs
1 c. white sugar
1/2 c. Bisquick
3/4 c. milk
2 tbsp. melted butter

In large pie plate combine apples, raisins, lemon peel, and spices. In blender combine eggs, sugar, Bisquick, milk, and butter. Blend on low speed for 1 minute. Pour over apples in pan. Sprinkle with streusel topping.

STREUSEL TOPPING:

1 c. Bisquick
1/2 c. chopped walnuts
1/3 c. firmly packed brown sugar
1/4 c. melted butter

In medium bowl stir Bisquick, nuts, sugar, and butter; mix well and cut with knife until topping is crumbly. Sprinkle evenly over apple mixture. Bake at 350 degrees for 55 minutes, until puffed and golden and center is set. Yield 8 servings.
