ITALIAN SPAGHETTI SAUCE 
1/2 to 3/4 c. olive oil
2 sm. cloves garlic, chopped
1 sm. onion, chopped
1 tbsp. parsley
1 tbsp. Italian seasoning
1/8 tsp. pepper
1 lb. chuck roast or pork, cut into 4 pieces
Sm. pieces pepperoni, if wanted
2 qts. tomatoes (may be put in blender if you want smooth sauce)
1 (12 oz.) can tomato paste
1 can water
1 tsp. salt or to taste

In 4-6 quart pan, add oil, garlic, onion, parsley, seasoning, pepper and meats. Brown for about 15 minutes, turning often. Add tomatoes. Cook at medium heat approximately 1 hour. Add paste and water. Stir until smooth. Add salt. Simmer for 1-2 hours.
