JENNI'S UNCOOKED MINT CHUTNEY 
1 c. finely chopped fresh mint
1/2 lb. apples, cored, finely chopped
1 c. raisins, finely chopped
3 med. onions, finely chopped
1/2 lb. tomatoes, peeled and finely chopped
2 c. cider vinegar
2 c. sugar
2 tsp. mustard powder
2 tsp. salt
2 tsp. white pepper

Chop the mint, apples, raisins, and onions in a food processor. Chop the tomatoes by hand. Combine them all in a large bowl.

In a kettle bring to the boil the vinegar, sugar, mustard, salt and white pepper, stirring until the sugar is dissolved. Boil for 3 minutes, then remove from heat and allow to cool. When cold, stir into the mint mixture and combine the ingredients well. Spoon into clean jars and water bathe.
