1/3 c. butter 1/3 c. brown sugar, packed 1 c. flour 1/2 c. shredded coconut FILLING: 1/2 c. sugar 1 (8 oz.) pkg. cream cheese 1 egg 2 tbsp. milk 1 tbsp. lemon juice 1/2 tsp. vanilla To make crust, cream butter with brown sugar; add flour and coconut and mix to make a crumb mixture. Reserve one cup for topping. Press remainder into bottom of 8 inch square pan. Bake at 350 degrees for 12-15 minutes or until browned. For the filling, blend sugar with cream cheese until smooth. Add egg and beat. Add milk, lemon juice, and vanilla and beat well. Spread over baked crust and sprinkle with reserved crumb mixture. Bake for 25 minutes. Cool and cut. |
