OKRA DELIGHT | |
1/2-1 lb. okra, sliced 1 sm. onion, chopped 1 pt. tomatoes, drained & chopped Pinch of sugar 1 can corn, drained 3 tsp. chili powder 2 jalapeno peppers, chopped Vegetable oil 1/8 tsp. black pepper Place enough oil in skillet just to cover bottom of pan. Saute okra, onion and jalapeno pepper. When onion is transparent add drained tomatoes, sugar, chili powder, black pepper and can of corn which has been drained. Cook stirring occasionally until okra is tender. Serve hot with cornbread and meat of your choice. |
