OKRA FRITTERS 
24 sm. okra pods, tender
1 tsp. baking powder
1 tsp. salt
2 tbsp. flour
1 egg

Cut okra into very small pieces. Place in a mixing bowl and mash with fork until fluffy. Add egg, beat well. Add flour, baking powder and salt. Beat until light and fluffy. Drop by teaspoonfuls into hot grease and fry until brown and crisp. Drain on paper.
