CREAM OF BROCCOLI SOUP 
1 bunch broccoli
1 med. potato
1 med. onion
1 clove garlic
2 tbsp. butter
1 can chicken broth
1 c. water
1/2 tsp. salt
1 c. half & half
2 c. shredded American cheese (optional)

Cut broccoli and potato into 1/2 inch cubes. Saute onion and butter until tender, add broth, water and salt, bring to boil. Add broccoli and potato, return to boil. Simmer 20 minutes. Add half & half, heat until hot. Add cheese, if desired. Stir well. For thickness, add 2 tablespoons flour.
